Federweißer – New Wine
When the Grape Juice Begins to Flow
When you bring the glass to your ear, Federweißer sounds like the rushing of the sea. Autumn is the time of harvesting of the grapes and the production of wine. Federweißer is also known as Bitzler, Rauscher or Sauser. The name comes from the yeasts that dance in the glass like tiny feathers and that are responsible for the slightly tingling flavour of the young wine.
The young wine is traditionally paired with hearty dishes such as onion tart, tarte flambée and quiche
